I have been visiting my local Sprouts Farmers Market since it opened a few months ago. In this recipe, I used Sprouts' own brand of taco seasoning. It is not over-salted, has no preservatives, and tastes great!
This recipe is gluten-free. Omit the cheese for dairy-free, Kaufmann Phase One Diet, and paleo tacos. Each taco has 3 net carbs per serving with the tortilla. Without the tortillas, you have about 1 net carb, depending on what you use as a topping.
What You Need to Make Grass Fed Beef Tacos
High-quality ground beef is the star of this dish. Look for grass-fed beef that has a fat content of 90% beef to 10% fat or 85% beef to 10% fat.

For The Tomato Sauce
Tomato sauce is sold in cans or cartons. Most tacos are made with just water to moisten the meat, but if you add tomato sauce, the meat has a wonderful flavor and is very moist. We use Pomi tomato sauce, which is made with Italian tomatoes. It has no added sodium and has no preservatives. It is available at Publix here in Key Largo.
How to Cook The Ground Beef
- Using a 10 or 12-inch heavy-bottomed skillet, brown the meat over medium-high heat, breaking it into small pieces as you go. Season with salt and pepper. When the meat is no longer pink, push all the meat to one side of the pan and slightly tilt the pan. Scoop out the drippings with a big spoon and discard.
- Mix taco seasoning with ½ cup of tomato sauce and ¼ cup of water. Add to meat. Cook an additional 2-3 minutes.
- Remove the meat from the pan or place the skillet on a cool burner top until ready to serve.
The Best Gluten-Free Tortillas
I picked up a package of Maria and Ricardo's tortillas at Sprouts. I was pleasantly surprised by how great they taste. They're light and just the right size for tacos. They were just what I needed. Each tortilla has only 4 net carbs. I prefer this Almond flour variety for my tacos. If you get "Everything" flavor by mistake, they are lightly seasoned and don't taste like a bagel, so they're fine for tacos too.
Gluten-Free Tortillas That "Taste Regular"
When I worked at Whole Foods Market a few years back, I took many people on gluten-free shopping tours because we were filling the shelves with new products almost every day. The other grocery stores hadn't gotten word that the gluten-free diet had become a real thing.
My group would walk around the aisles and when we would find a great-tasting product, everyone would take a bite, shake their heads up and down, and invariably the phrase, This Tastes Regular, came out of some of their mouths.

Why Should I Eat Gluten-Free Tacos Shells?
No one is telling you to eat gluten-free tacos. In fact, on the Kaufmann Phase Two Diet, which I follow, as your body heals from its many ills, you may try out a wheat tortilla or two, and note how your body responds to it. A good wheat tortilla is free from yeast and sugar.
It was my intention to write this post using a high-quality wheat tortilla. I looked around the grocery store for an organic tortilla free from soy, corn starch, nut oils, sugar, and preservatives. I couldn't find one!
Anyway, if you eat wheat, look for organic tacos shells. If you've kicked the grain from your diet, you can pick up Maria & Ricardo's at Betty's Health Foods in Key Largo or the new Sprouts Farmers Market store in Homestead on Campbell Drive if you're in the Keys. They are also available at Whole Foods Market.
How To Assemble a Taco
First, heat the shell. In a dry skillet over high heat, warm each tortilla for 10 seconds on both sides. You can stack them on a plate until you're ready to use them.
Next, cradling the tortilla in your hand, add a few tablespoons of the ground beef. If you're using cheese, that should be next. The cheese will start melting from the heat of the meat. A little sour cream is the next step. The sour cream will hold onto your toppings so they don't spill out.

Flip and heat the other side for another 10 seconds. and you're ready to go. You don't need to spray the pan before dropping them in.
The tortilla will be spotty-brown when it gets crispy. You can use Maria and Ricardo's tortillas for tacos, quesadillas, or in place of bread for a wrap.
Can I Double This Recipe?
Yes, you can double this recipe. Use a 12 or 14-inch skillet for best results.
How To Reheat the Leftovers
I make this recipe with one package of tortillas, which has 6 pieces in it. If there are leftovers, I pack each one separately in foil. The next day, I have the easiest lunch ever! I either take the packets and put them in a preheated oven (350 degrees F) for 10 minutes. If I'm in a rush, I unwrap them, place them on a plate, and microwave the plate for 30 seconds.
Maria and Ricardo's tortillas held up in both the oven and microwave. I thought they would get stiff, and I was surprised by how pliable they were the next day.
