    Raw Bell Pepper Cups (Faux Corn Chips)

    Raw Bell Pepper Cups (faux corn chips) can easily be sliced into wedges and enjoyed in place of tortilla chips. A grain-free and healthy alternative to corn chips, bell peppers are a hearty vegetable that's easy to make and create a substantial "scoop" for your favorite dips.

    I developed this recipe because I do not eat corn. Whether you're on the Paleo, Kaufmann, or Keto Diet, corn is a no-no, and for good reason! Corn is a grain, and the crops could harbor mycotoxins (byproducts of mold), making the grain an unhealthy option.

    In a Mexican restaurant, the first thing they put on the table is a big bowl of corn chips. They taste great! I know, I used to eat them too.

    When in this situation now, I ask the server for cut-up vegetables. They happily oblige.

    For a healthy alternative to corn or tortilla chips, try these bell pepper cups! Quickly slice the peppers lengthwise and then crosswise, you make a little vehicle that transports the dip right into your mouth.

    How to Select and Store Bell Peppers

    Luckily, sweet bell peppers are available at all grocery stores and farmers' markets. Choose peppers that are smooth and firm. The stems should be green, not brown. Blemishes, bruises, and soft spots show decay and should be avoided. DOmestic organic bell peppers are a healthier option than their conventional counterparts.

    Store bell peppers in crisper drawer of your fridge up to 5 days.

    If the peppers have any blemishes, soft spots, or mold on them, they should go in the trash; the entire item is affected.

    1. Under cold running water, rinse the peppers, including the crevices by the stem.
    2. Slice the peppers in half through the stem.
    3. Scoop out the seeds and the white membranes with a teaspoon.
    4. Rinse again.
    5. Next, cut each half into thirds and then each wedge in half.

    How to Prep Ahead of Time

    You can prepare the raw bell pepper cups up to one day in advance of serving them. Wrap the prepared peppers in a wet paper towel and place them in a plastic bag or glass storage container in the veggie drawer of your refrigerator.

    How to Serve Bell Pepper Cups

    Serve your Bell Pepper cups with fresh, homemade pico de gallo and guacamole. You can also use them to scoop up tuna salad and chicken salad!
