- Onions: Green onions (scallions) give the classic bagel shop flavor. Use the white and light green parts plus a little of the dark green. Finely minced red onion adds more bite, and chives are the mildest choice.
- Carrot: Grate it on the large holes of a box grater. One small carrot gives you about 3 tablespoons. Adds color and a little sweetness.
- Red bell pepper: Adds sweetness and bright red color. Orange or yellow bell pepper works the same way.
- Radishes: I used watermelon radish, but any kind works. Half a medium radish gives you about 1 tablespoon. Radishes add a peppery bite, extra crunch, and pink-and-white flecks of color. Chop them fine and pat them dry so they don't water down the spread.
- Fresh dill (optional): A tablespoon of chopped fresh dill adds a bright, herby flavor that goes well with the crunchy vegetables.
