For an extra punch, we're coating red potatoes with a French fry-style seasoning. Use garlic powder, onion powder, smoked paprika, black pepper, and just a small pinch of sugar for color and flavor.
The sugar helps the edges caramelize and brown, but go easy, too much can make them sweet. Toss the potatoes well with oil first so the seasoning sticks, then roast cut side down for crisp edges.
Make sure not to crowd the pan so the potatoes have room to roast on all sides. If they're too close together, they'll steam instead of getting a golden finish.
