Roasted Sweet Potato Halves

Roasted sweet potato halves bake faster than whole sweet potatoes. Cut one down the middle, then roast cut-side down at 400°F for 30 to 40 minutes, until the centers are creamy and the cut sides are caramelized. I finish mine with butter, brown sugar, and cinnamon, but they're just as good with only olive oil and salt.

Why You'll Love This Recipe

We eat a lot of sweet potatoes. A whole one can take close to an hour in the oven, so when I'm in a hurry, I cut them in half. There's no peeling or chopping into little pieces, just one cut down the middle.

Roasting them cut-side down puts the flesh right against the hot pan, so the cut sides brown while the centers turn soft and creamy. For a sweeter side, flip them, brush with melted butter, sprinkle with brown sugar and cinnamon, and bake for 10 more minutes.

Ingredients

Three whole sweet potatoes on parchment with olive oil, salt and pepper, brown sugar, ground cinnamon, and two pats of butter.

Sweet potatoes: Use 3 medium orange sweet potatoes of similar thickness so they cook evenly. Scrub the skins well and trim any damaged spots. There's no need to peel them. The skin helps the halves hold their shape.

Olive oil and kosher salt: A light coating of oil helps the cut sides brown. Add black pepper if you like.

Butter, brown sugar, and cinnamon (optional): Melted butter, brown sugar, and ground cinnamon make a quick sweet finish. Leave them off for a savory side.

See the recipe card below for exact amounts.

How to Roast Sweet Potato Halves

Brushing oil on sweet potato halves.

Step 1: Cut and season. Preheat the oven to 400°F (200°C) and line a rimmed sheet pan with parchment paper. Scrub and dry 3 medium sweet potatoes, then cut each one in half lengthwise. Brush the cut sides with 1 tablespoon olive oil and season with ½ teaspoon kosher salt and black pepper, if you like.

Step 2: Roast cut-side down. Place the halves cut-side down on the prepared pan, leaving a little room between them. Roast for 30 to 40 minutes, until a fork slides easily into the thickest part and the cut sides are browned. For plain roasted halves, stop here and serve.

Step 3: Add the topping. Turn the halves cut-side up and brush them with 2 tablespoons melted butter while they're still hot. Sprinkle the brown sugar and cinnamon evenly over the top.

Step 4: Bake and serve. Return the pan to the oven for 10 more minutes at 400°F (200°C), until the sugar melts. Serve warm.

Chef's Tips

  • Choose potatoes of similar thickness so they finish cooking at the same time.
  • Dry the potatoes well before adding the oil.
  • Leave space between the halves and keep them cut-side down while roasting. Crowded halves steam instead of browning.
  • Check the thickest part with a fork. A browned bottom does not always mean the center is tender.

Storage and Reheating

Refrigerate cooled halves in an airtight container for up to 4 days.

Reheat in a 350°F (175°C) oven until warmed through, or microwave individual halves.

To freeze, wrap cooled halves individually and freeze in a freezer-safe container for up to 3 months.

Thaw overnight in the refrigerator before reheating.

Roasted Sweet Potato Halves FAQ

Do I need to peel sweet potatoes before roasting?

No. Leave the skins on to help the halves hold their shape. Scrub them well before cutting.

Do sweet potato halves cook faster than whole sweet potatoes?

Yes. Cutting them in half exposes the center to heat, so they usually finish sooner than whole potatoes of the same size.

How long does it take to bake sweet potato halves?

Bake sweet potato halves at 400°F (200°C) for 30 to 40 minutes, depending on their size. They're done when a fork slides easily into the thickest part. Larger halves may need another 5 to 10 minutes.

Should sweet potato halves go cut-side up or down?

Cut-side down. The cut sides sit right on the hot pan, so they brown and caramelize while the centers cook through. Flip them cut-side up only for the butter-and-brown-sugar finish.
