Season the Potatoes: Combine the salt, black pepper, garlic powder, onion powder, and paprika in a small bowl. Arrange the potatoes on the prepared sheet pan with the cut sides facing up. Brush the cut surfaces and skins with oil, then sprinkle the seasoning mixture evenly over the potatoes. Turn the potatoes cut-side down so the flesh is directly against the parchment paper or sheet pan.
Roast Until Tender: Roast for 15 minutes, then test one potato with a fork. Continue roasting for another 15 to 30 minutes, depending on the size of the potatoes. They are ready when a fork slides easily into the center.
