Easy Spanish Rice Recipe made with converted rice, tomato sauce, onion, green pepper, garlic, ketchup, and peas. This one-pot side dish cooks in 20 minutes and goes with chicken, beef, pork, fish, or shrimp.
Heat the olive oil in a medium saucepan over medium heat.
Add the onion and green pepper. Cook for about 4 minutes, stirring occasionally, until they begin to soften.
Add the garlic and cook for 30 seconds.
Pour the entire 8-ounce can of tomato sauce into a 1-cup liquid measuring cup. Add about 2 tablespoons of water, or just enough to bring the liquid up to the 1-cup line.
Pour the tomato sauce, water, ketchup, frozen peas, rice, and salt into the pan. Stir well. Increase the heat and bring the mixture to a boil.
Stir the rice once, reduce the heat to the lowest setting, and cover the saucepan with a tight-fitting lid.
Cook for 20 minutes without lifting the lid.
Remove the saucepan from the heat. Gently fluff the rice and serve hot.

Rice: Use Ben’s Original Long Grain White Rice, formerly sold as Uncle Ben’s Converted Rice. This recipe was developed and tested with converted rice.Tomato Sauce: Use an 8-ounce can of plain tomato sauce, not marinara or pasta sauce.Measure the liquid carefully. Pour the entire 8-ounce can of tomato sauce into a 1-cup liquid measuring cup. Add about 2 tablespoons of water to reach the 1-cup line. Then add 1 additional cup of water to the saucepan.Add the peas directly from the freezer.Once the rice is covered, keep the burner on its lowest setting and do not lift the lid during the 20-minute cooking time.Storage: Let the rice cool, then store it in an airtight container in the refrigerator for up to 4 days.Reheating: Reheat in the microwave or in a covered saucepan over low heat until hot with a little water.Freezing: Cool completely, then freeze in an airtight container or freezer bag for up to 3 months.
