Italian Carrot Salad is a simple, old-school side made with shredded carrots, tomatoes, onions, and bell peppers. Everything gets tossed in a light Dijon vinaigrette and finished with fresh basil. It’s fresh, crisp, and works with just about any meal.
2tablespoonsfresh lemon juice,or 1 T apple cider vinegar
1teaspoonDijon mustard
1small garlic cloveminced or pressed
salt
freshly ground black pepper
FOR THE SALAD
6medium carrots or 3 large carrots,shredded into long ribbons with a vegetable peeler
1cupcherry or grape tomatoes,halved
1small red onion,diced
1bell pepper,diced
fresh basilfor garnish
lemon wedgesfor serving
Instructions
Add olive oil, lemon juice, mustard, garlic, a big pinch of salt, and freshly ground black pepper to a screw-top jar. Shake the jar until the dressing is incorporated.
