Learn how to roast garlic in foil for soft, caramelized cloves that add rich flavor to any dish. Roasting garlic mellows the bite and brings out its natural sweetness. Use it in sauces, spreads, or mashed into vegetables and meats.
Slice about ¾ inch off the top of each garlic bulb to expose the cloves.
Drizzle each bulb with a teaspoon of olive oil. Sprinkle with a pinch of salt, black pepper, a little red pepper flakes, or your favorite fresh or dried herbs.
Wrap each bulb loosely in foil and place on a sheet pan.
Roast for 45 minutes.
Open one packet and gently squeeze a clove. If it’s not soft and caramelized, reseal and roast for another 10 to 15 minutes.
Let the garlic cool for at least 10 minutes before handling. Then squeeze out the cloves and mash with a fork until smooth.
Transfer the roasted garlic to an airtight container and refrigerate for no more than 4 days, or freeze for longer storage.
Notes
Storage: Let the roasted garlic cool completely. Spoon it into a small airtight container, cover with olive oil, and refrigerate for up to 4 days. For longer storage, portion the mashed garlic into an ice cube tray and freeze. Once solid, transfer the cubes to a freezer-safe bag. You can also freeze whole roasted bulbs by wrapping them tightly and placing them in a freezer-safe bag or container.
Serving Suggestions: Spread roasted garlic on warm bread or toast, or stir it into mashed potatoes, pasta, soups, sauces, dressings, or scrambled eggs.
