The boiling time for russet potatoes depends on their size and whether they are whole, halved, or cubed. To check for doneness, pierce them with a fork—if it slides through easily, they’re ready.
Peel the potatoes and rinse them under cold running water. Cut them into evenly sized cubes. For whole or halved potatoes, see the cooking times below.
Place the potatoes in a large pot and add enough cold water to cover them by about 1 inch. Add a generous pinch of kosher salt.
Bring the water to a boil over high heat, then reduce it to a simmer.
Simmer cubed potatoes for 10–15 minutes, halved potatoes for 20–25 minutes, or whole potatoes for 30–40 minutes. They’re ready when a fork slides easily into the center.
Drain the potatoes in a colander. Return them to the pot over low heat for 1–2 minutes to remove excess moisture.
Serve whole or halved, mash, or cool for use in another recipe.
Notes
Use 1 teaspoon of kosher salt per quart of water. Most of the salt stays in the cooking water and drains away, so the calculated sodium is only an estimate.
