Instructions
Combine the marinade ingredients in a bowl or zip-top bag. Add the chicken and coat well. Refrigerate for 20–60 minutes.
While the chicken is marinating, slice the onion and bell peppers into thin strips.
Heat 1 tablespoon of oil in a cast-iron skillet or grill pan over medium-high heat.
Remove the chicken from the marinade, let the excess drip off, and discard the remaining marinade. Cook for approximately 5–7 minutes per side, depending on thickness, until the thickest part reaches 165°F.
Transfer the chicken to a cutting board and let it rest for 5 minutes.
Add the remaining tablespoon of oil to the pan. Add the onion and peppers, season with salt and pepper, and cook until tender and lightly charred, about 5–7 minutes.
Slice the chicken into strips. Serve with the vegetables, warm tortillas, lime wedges, and your favorite toppings.

Storage and Reheating: Refrigerate the chicken, peppers, and onions in an airtight container within two hours of cooking. Store them separately from the tortillas and toppings for up to 3–4 days.Reheat in a skillet or microwave until the chicken reaches 165°F.
