Rinse fish under cold running water and pat dry with a paper towel.
Season the fish lightly with salt and pepper.
Dredge each piece of fish in the flour, dip it into the beaten egg, and coat it in the breadcrumbs. Press the fish into the breadcrumbs to make sure they stick.
Heat a half cup of cooking oil in a medium heavy-bottomed skillet over medium-high heat.
Fry for about 2 minutes per side until golden brown and crispy. The centers should be opaque and flaky.
Remove from the skillet and drain on a paper towel-lined plate for a minute or so.
Season with a little flaky sea salt and freshly ground black pepper.
Serve hot with lemon wedges, coleslaw, or your favorite dipping sauce.
