Rinse the cilantro under cold water or swish in a bowl to remove any grit.Pat dry, remove thick stems, and chop. You’ll need about ½ cup loosely packed leaves.
Cut the limes and squeeze the juice. Add 2 tablespoons first, then taste and add more if needed. For extra flavor, you can add a little lime
Peel and mince the garlic. Use 1–2 cloves, depending on your taste.
In a medium bowl, mix the sour cream, cilantro, lime juice, garlic, and salt until smooth.
Taste and adjust. Add more lime for tang or a little hot sauce for heat.

Serving and Storage
Chill the sauce for at least 30 minutes before serving so the flavors come together.
Use it on grilled chicken, tacos, fajitas, baked fish, or roasted vegetables.
Store in an airtight container in the refrigerator for 3–4 days. Stir before serving.
