Make this easy Cajun Dirty Rice recipe with ground meat, spices, and fluffy white rice. It’s a bold, one-pan dish inspired by the flavors of Louisiana. Serve it as a side or a budget-friendly main course the whole family will love.
½poundground pork or seasoned sausagelike authentic andouille sausage or Jimmy Dean's breakfast sausage
½pound lean ground beef
¼pound chicken livers,finely chopped
½cupdiced green bell pepper,about half a pepper
1cupdiced yellow onion,1 onion
1diced celery stalk
1cuplong-grain rice, rinsed,I use Uncle Ben's converted rice
2green onions,sliced
2teaspoons minced garlic
1tablespoonWorcestershire sauce
2cupslow-sodium chicken broth or water
2teaspoonscreole seasoning,I use Tony Chachere’s
¼cupchopped parsley
salt and black pepper to taste
Instructions
In a large Dutch oven or 6 to 8-qt saucepan with a lid, sauté all the meat (sausage, beef, and liver) over medium heat, breaking the large pieces with a wooden spoon as it cooks. Season with a little salt and pepper. Cook a few minutes until the meat is no longer pink.
Add the bell pepper, onions, and celery to the pot. Cook for 5-7 minutes, until the veggies soften and start to brown.
Add the rice, green onions, and garlic; continue to stir for 1-2 minutes until the rice begins to turn opaque.
Add the Worcestershire sauce, stock, and Cajun/Creole seasoning. Mix well, lower heat to LOW, and cover. Simmer for 20 minutes or until the rice is tender and all the liquid has been absorbed.
Remove from the heat and stir in chopped parsley. Serve hot.
Notes
Note: I put 2 teaspoons of creole seasoning in the pot. For mild spicy rice, use one teaspoon. For authentic spicy Cajun dirty rice, use 3 or more teaspoons.Homemade Cajun Seasoning
2 tablespoons sweet paprika
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon dried oregano
1 teaspoon cayenne pepper (add more for heat)
1 teaspoon black pepper
1 teaspoon white pepper
Mix all ingredients in a small jar. Store in an airtight container for up to 3 months. If you make homemade seasoning for this recipe, season the rice as the dish cooks with additional salt. There is salt in the bottle seasoning that I used so I didn't add much to the recipe.
