Burger Bowls with Cauliflower Rice are made with seasoned ground beef, warm cauliflower rice, crisp chopped vegetables, fresh berries, and your favorite dressing. They make an easy gluten-free lunch or dinner.
1medium head cauliflower,cut into florets, or 1 bag fresh or frozen cauliflower rice
1tablespoonbutter
1grated carrot
1cupshredded cabbage
1diced cucumber
1cupblueberries,raspberries, sliced strawberries, or a combination
1tablespoonchopped parsley,cilantro, or other fresh herbs
¼cupyour favorite salad dressing
Instructions
Heat a large skillet over medium-high heat. Divide the ground beef into four equal portions and shape each one into a patty. Season both sides with salt and pepper.
Place the patties in the hot skillet. Cook the burgers for 4 to 5 minutes on the first side. Flip and cook for another 2 to 3 minutes, for medium rare. Transfer the burgers to a plate and let them rest for 5 minutes.
Meanwhile, prepare the cauliflower rice. Place the cauliflower florets in a food processor and pulse until they are broken into small pieces that resemble rice. Work in batches to keep the cauliflower from becoming wet or mushy. Skip this step when using packaged cauliflower rice.
Melt the butter in a large skillet over medium heat. Add the cauliflower rice and season lightly with salt. Cover and cook for 3 minutes. Remove the lid, stir, and cook for another 2 to 3 minutes, or until the cauliflower is tender and any excess moisture has evaporated.
Divide the warm cauliflower rice among four bowls. Arrange the carrots, cabbage, cucumber, and berries over the cauliflower rice.
Top each bowl with a whole burger patty, a sliced burger, or large pieces of cooked beef. Sprinkle with the chopped herbs and drizzle with salad dressing. Season with additional salt and pepper as needed and serve warm.
Notes
Fresh or frozen cauliflower rice may be used. Cook frozen cauliflower rice uncovered for a few extra minutes to allow the excess moisture to evaporate.
Ground beef should reach an internal temperature of 160°F.
Use any vegetables, berries, or fresh herbs you have on hand.
Serve with your favorite salad dressing, or leave it off and season the bowl with salt and pepper.
The burgers may be served whole, sliced, or broken into large pieces.
Cheese is optional, but the bowl has plenty of flavor without it.
