Mashed sweet potatoes with maple syrup are a healthier version of mashed potatoes. Moistened with grass-fed butter and maple syrup instead of brown sugar, these potatoes are not only healthy but also loaded with antioxidants.
2medium sweet potatoes,about 2 pounds, peeled and evenly diced
2tablespoonunsalted butter(such as Kerrygold)
1tablespoonpure maple syrup
½teaspoonground cinnamon
½teaspoonground ginger(optional)
pinchground nutmeg(optional)
fresh parsley or thyme for garnish
1teaspoonsalt
½teaspoonfresh black pepper
Instructions
Bring a large pot of salted water to a boil. Add diced potatoes and lower heat to a simmer, right below boiling point. Simmer for 15 minutes or until fork-tender.
Drain potatoes in a colander and add them back into the cooking pot with the butter. Mash with a handheld potato masher until smooth.
Add maple syrup, cinnamon, ginger, nutmeg, salt, and pepper, and stir to combine. Add salt and pepper to taste.
Serve with a flurry of fresh chopped herbs.
Notes
If you prefer to bake the potatoes, follow these directions:Adjust the oven rack to middle position and heat the oven to 400 degrees Fahrenheit. Place potatoes on a parchment paper-lined baking sheet (they can drip) and roast one hour, or until tender. Remove potatoes from the oven, slice in half, and let cool for a few minutes. Scoop pulp out of potatoes and proceed with the rest of the recipe.
