I used to think everything in moderation was the way to live. I stopped eating gluten about a decade ago. In My Journey to Better Health, I wrote about how I detoxed from gluten. The mysterious belly aches I had my whole life, just disappeared after 21 days of detoxing. It was worth every minute!
After the gluten was out of my body for about a year, I started craving raw vegetables. Of course, I was working at Whole Foods and that helped a lot!
But, after a while, I put all the processed foods behind me and went to work on myself. I started cooking tons of vegetables. The more I ate, the better I felt. I started following the Paleo diet and started a yoga practice too!
My dad knew I was watching everything I ate and suggested I watch Know the Cause on TV. He said, "This guy knows what he's talking about!"

I watched 15 minutes of one show, and I knew, just like my dad, this guy knows what he's talking about! I bought one of Kaufmann's books and read it cover to cover. I made a copy of The Phase 1 Diet from the book, and I taped it to my refrigerator door.
The Phase One Diet is all about getting rid of the harmful fungi in your body and changing your diet so you're eating correctly to maintain a good gut biome. There are good and bad bacteria that live in your belly and you must continually fight to find the right balance for your body to thrive.
